Grilled Vegetable Platter with Yogurt Mint Sauce
Ingredients 
Veggie Squad:
• 1 zucchini, sliced into stripes
• 1 yellow squash, same deal
• 1 red onion, thick and sassy rings
• 1 red bell pepper, chunked up
• 1 yellow bell pepper, also chunked
• 1 bunch of asparagus—snapped and ready!
• 2 tbsp olive oil (get that shine!)
• Salt & pepper love
Saucy Goodness:
• 1 cup plain Greek yogurt (creamy base!)
• 1 garlic clove (zippy!)
• 2 tbsp mint, chopped like confetti
• 1 tbsp lemon juice (zing!)
• Salt & pepper to taste
Directions 
1. Heat that grill to medium-high—it’s veggie party time!
2. Toss your rainbow crew with oil, salt, and pepper.
3. Grill ’em up 3–5 minutes per side ‘til you see those dreamy grill lines.
4. Whisk together your yogurt sauce—minty, lemony, garlicky goodness.
5. Lay those veggies out on a platter, drizzle or dip the sauce, and serve it with flair!
